Flan Orange au Bleu

(Carrot and Blue Cheese Custard)

 

   *100g (31/2 oz)  Blue Cheese                                *50g (11/2 oz) Flour

*4 or 5 medium carrots                                        *50 cl (18 oz) Milk

   *4 eggs                                                                *10g (1 Tbs) Butter

 

Preheat oven at 180°C (350°F)

 

Peel carrots and cook until very tender. Mash then in the food processor (you can also mash them with a fork but the texture of the flan won’t be the same. I’ve tried both and I personally prefer mashing the carrots in the food processor). Crumble blue cheese in a large bowl, add flour and mix. Add eggs one at a time. Season with salt & pepper. Add carrots. Add milk little by little and mix until you get a smooth mixture. Grease a dish with the butter and pour the batter. Bake “au bain marie” for about 30 minutes. This dish is better served warm with meat or a salad.

 

Serves 4.

 

Note: The bain marie—or waterbath-- technique is very easy. You place your dish in a large, shallow pan of water. The water should come halfway to the top of the dish containing your recipe.
